AMA Restaurant

Small Plates. Big Flavors.

When you step into AMA Restaurant, you're entering exactly what downtown Hillsboro has been missing. This gem serves high-quality Spanish tapas in an inviting space that balances sophistication with approachability. The atmosphere carries a fun, vibrant energy that makes it perfect whether you're planning an intimate gathering or a lively group dinner. And if you prefer outdoor dining, the rooftop deck offers a cozy setting with stunning views that elevate the entire experience. From the moment you arrive, you'll sense that this place is different from typical suburban dining options.

Exceptional Service and Knowledgeable Staff

The team at AMA treats service as an art form. Your server or bartender will guide you through the menu with genuine expertise and attentiveness, helping you navigate the European-inspired small plates and extensive drink offerings. They're informative without being overbearing, friendly without being intrusive, and genuinely helpful when you're trying to decide between dishes or find the perfect wine pairing. This passionate and knowledgeable front of house team works seamlessly with the talented back of house crew to create dining experiences that guests can't wait to repeat. You'll feel taken care of throughout your entire visit.

Small Plates That Exceed Every Expectation

The food at AMA consistently blows people away. Every dish that comes out of the kitchen demonstrates bold flavors, careful balance, and thoughtful execution. The broccolini has become a standout favorite, earning praise for its preparation and flavor profile. The big shrimp, pork belly, and Iberico ham all compete for attention as top choices. The patatas bravas deliver on the promise of traditional Spanish tapas with their own distinctive touch. Even the bone marrow impresses with its richness and presentation. The concept of small plates designed for sharing means you can explore multiple dishes in one visit, and guests regularly try half the menu because everything sounds too good to pass up.

Creative Cocktails and Curated Wine Selection

The drink program matches the food in quality and creativity. Cocktails like the Flower Garden and the Trailblazer showcase the same attention to detail and bold flavors you'll find on the plates. These aren't standard drinks you can get anywhere; they're crafted with intention and skill. The wine list, curated by certified sommelier Tina Shibuya, focuses on unique regional wines, particularly from the Basque region. The selection is solid and thoughtfully chosen to complement the Spanish-inspired menu. Whether you're a wine enthusiast or simply enjoy a good glass with dinner, you'll find options that create that perfect pairing symphony between what you're drinking and what you're eating.

Culinary Excellence from Experienced Leadership

Executive Chef Jeremy Lees and Sous Chef Daniel De La Rosa lead a kitchen that understands how to balance tradition with innovation. They work with locally-sourced ingredients to create dishes that feel both authentic and fresh. Every plate shows evidence of being well thought through, from the initial concept to the final presentation. The artful plating adds visual appeal without sacrificing substance. This is a team that clearly takes pride in their craft, and that dedication shows in every bite. Owner and proprietor Jill Craig has assembled a group of talented professionals who share a common vision for elevating Hillsboro's dining scene.

This restaurant does not disappoint, and you'll find yourself planning your return visit before you've even finished your meal.

This is a gem of a restaurant serving high-quality Spanish tapas. The food is delicious, the wine list is well curated, and the staff is informative, friendly, and helpful. The space has a fun vibe and there's also a rooftop deck if you want an outdoor dining experience. I can't wait to go back.

Crazy. Exceeded all expectations. The service was great. Our server/bartender was super knowledgeable and attentive. The atmosphere is mid, but they make up for it and then some. The food... We were blown away. We had 7 different dishes and every single one exceeded expectations and even hopes. The broccolini, the big shrimp, the pork belly, and the desert that is like creme brulee with orange and cinnamon (I don't remember the name and it's not on the menu) were our favorites. The basque wine selection is solid and the cocktails were as impressive as the food. For drinks, the flower garden and the trailblazer were wildly good. This is exactly what downtown Hillsboro needed. Do yourself a favor and check this place out, it does not disappoint.

Fantastic cocktails, well-executed tapas and entrees, bold flavors—this is a foodie paradise. We tried almost half the menu and everything was so good. Our favorite was probably the broccolini, but the pork belly, Iberico ham, bone marrow, and patatas bravas were all a close second. Every dish was well-balanced and thought-through. We will be back.
